This simple vegetarian cucumber sandwich is inspired by the flavors of elote, the beloved Mexican street corn dish. Instead of using corn, we enhance the cucumber slices with a delightful combination of cotija cheese, lime, and cilantro, resulting in a delicious filling. Cotija cheese, a salty and crumbly Mexican cheese, offers a taste and texture akin to feta cheese, making it a suitable substitute if needed. To add a touch of peppery goodness, we incorporate arugula, although any tender greens will complement the sandwich perfectly.

Ingredients:

4 slices of whole wheat bread

1 large cucumber, sliced

1/2 cup crumbled cotija cheese

Juice of 1 lime

2 tablespoons mayonnaise

1 tablespoon chopped fresh cilantro

Salt and pepper to taste

Instructions:

In a small bowl, combine the crumbled cotija cheese and lime juice. Toss to coat the cheese in the lime juice and set aside for a few minutes to marinate.

Lay out the four slices of bread and spread mayonnaise evenly on each slice.

Place a layer of cucumber slices on two slices of bread. Gently add a touch of salt and pepper to the cucumber slices.

Take the marinated cotija cheese and divide it evenly among the two slices of bread with the cucumber. Spread the cheese over the cucumber slices.

Sprinkle chopped cilantro on top of the cotija cheese.

Top the sandwiches with the remaining slices of bread, mayo side down.

Press down gently on the sandwiches to help them hold together. Use a sharp knife to remove the crusts, if desired.

Cut each sandwich diagonally to create two triangular sandwiches.

Serve immediately and enjoy!
